When the pathway to your destination is lined with working vineyards and mesmerising sculptures, you know you’re in for a treat. Jackalope is a feast for the senses, with every element—from the stunning black architecture, through to the kitchen garden and the Geode spa—thoughtfully curated and designed around the myth of the Jackalope and the associated alchemic theory.
Upon check in, the warm and welcoming Stefania showed me through each and every feature of my breathtaking vineyard room. While the obvious wins were the jaw-dropping view of rolling grape vines and the deep soak Japanese bathtub, the small details completed the picture. From custom made bath salts with pinot grapes sourced from the onsite vineyard, to freshly ground French press from collaboration with local coffee producers, Commonfolk Coffee, to the welcome drink at the glamorous and eccentric Flaggerdoot; your every whim is catered for at this luxurious getaway.
The most memorable moments of my visit were plunging into the comfortably heated swimming pool and adjoining spa, and soaking in the vistas of verdant vines. The fruity Peninsula Colada was an ideal poolside sip and indulging in the complimentary gourmet breakfast at Doot Doot Doot well and truly eclipsed your standard hotel brekkie! Can’t wait to go back.
What to Expect:
Bold, contemporary design and architecture define the sleek wine region stay; Jackalope. The boutique hotel is framed by rolling vineyards synonymous with the Merricks North region of the Mornington Peninsula. Voted Hotel of the Year by the 2017 Gourmet Traveller Hotel Awards, it’s no question as to why.
The hotel has effectively been curated by the best creative minds; from top tier interior design, to thoughtfully commissioned installations and artwork; all centred around the theme of alchemy. The architecture evokes a surreal vibe, but you can rest assured that the 44 designer rooms, including Terrace, Vineyard and Lairs—the most lavish signature suites—are floor to ceiling luxury. Think custom-made furnishings, rain showers and deep-soak Japanese bathtubs.
Private terraces allow you to take in the Willow Creek Vineyard, inspiring you to go for a wander and explore the gourmet offerings of this modern accommodation masterpiece. Sample a casual bite to eat at Rare Hare restaurant and wine bar, try a sip at Willow Creek Wines' cellar door, or splash out on the upscale, one hat rated, Doot Doot Doot, where tasting menus are cutting edge and the décor is awe inspiring—no really, the ceiling is covered with a 10,000-lamp chandelier that appears as a flowing garden of golden bubbles; representing the fermentation stage of alchemy.
For those that may adventure elsewhere on the Peninsula to explore its well known gourmet treats, don’t be shy in returning to Flaggerdoot, Jackalope’s cocktail lounge that stays open till midnight. Sip on a Southside Fizz while you play a round at the electric blue pool table.
Speaking of pools, make sure you take a dip in the super-luxe infinity lap pool, complete with spa treatments or private dining available in poolside pavilion; The Geode, of course.
While the pool may seem like an obvious choice; this hotel has all the hallmarks of upmost luxury, but the vineyard vistas just top it off. Talk about surreally beautiful.

Eat, See, Do
While the Mornington Peninsula is teeming with the gourmet—both the food and beverage variety—you really are spoiled for choice at Jackalope. Start your day with the complimentary made-to-order breakfast at Doot Doot Doot, then make your way across the piazza to Rare Hare for Mediterranean style snacks and share plates, with matched wines from onsite vineyard; Willow Creek. Enjoy an afternoon (or late night) cocktail at Flaggerdoot; where the team specialise in whisky—according to lore, it’s the Jackalope’s favourite liquor. Feast on a tasting menu at Doot Doot Doot, where contemporary cuisine reigns king—Doot Doot Doot is the name for the leader of a Flaggerdoot (group) of Jackalope. If you’re keen to explore nearby sights and tastes of the Mornington Peninsula, head into Red Hill to taste wines and dine at Montalto, Polperro, Red Hill Estate, Foxeys Hangout and more. Pick strawberries and cherries in summer, meet the goats and try cheese at Main Ridge Dairy, explore lavender gardens and the maze at Ashcombe, and head to the beach either side of the Peninsula. Locals recommend the sandy shores of Pt Leo and Mt Martha.
