Calstock is a celebrated part of Deloraine's history, which is not surprising considering work started on the Georgian home in 1837, and more recently it has picked up major awards as one of Tasmania's premium gourmet accommodation experiences. This is truly a grand building, but accessible as well. Calstock sits high above town, cloaked in its own formal gardens and welcomes guests from around the world.
With Head Chef Daniel Tourancheau at the helm, the kitchen and dining room provide an innovative blend of local produce and Australian flavours cooked with a degree of French flair. The dining room is clad in posters reminiscent of a French bistro, and breakfast next to the kitchen is pure country comfort.
 Calstock's rooms are quite simply extravagant, both in size and the richness of furnishings. But then so is the guest lounge where everyone gathers for an aperitif before dinner. During the day explore the grounds, visit the stables that produced a number of Melbourne Cup winners, prearrange a group cooking class with Daniel and just indulge in Calstock's grandeur.
